The spelt wheat is the ancient grains of origin of the wheat commonly available on the market today. The data shows that 70-80% of people with wheat allergies can even eat them without problem.
Gluten, which is the cause of wheat allergies, is thought to have arisen through selective breeding of wheat, and the spelt wheat, which has not been selectively bred, contains almost no gliadin, the component that makes gluten.
Spelt wheat also has the advantage of being highly nutritious and has a rich, nutty flavor, giving it a depth of flavor not found in modern wheat.
In our restaurant we serve dishes not only made with the spelt flour, but we also carefully consider other ingredients and seasonings, and we are particular about growing our own vegetables as much as possible.
